Purslane is a plump, rambling succulent with gentle yellow flowers that open only when the sun shines ā rather ill-fitted to being called a weed. It is salty and crunchy ā a satisfying edible (and rich in Omega 3 fatty acids!) that makes a great addition to salads. It certainly takes over, but our mouths and tummies are happy for this.
